Can I update metadata for any Solana token?

No. The connected wallet must control the token's metadata update authority, and the metadata must still be mutable. Immutable or revoked metadata cannot be edited.

Will updating metadata change my token address or balances?

No. Metadata updates do not create a new token and do not modify holder balances, supply, or token accounts. The token mint address stays the same.
